Our Hand Crafted Copper Still
Tradition demands that a still should have a name, so we named ours “Flora” after Flora MacDonald. Raised on Skye, Flora helped Bonnie Prince Charlie escape across the water to Skye from Uist in 1746.
“Speed bonny boat like a bird on a wing,

We believe Flora has delivered a remarkable Gin
Our hand selected botanicals include Juniper, Rose Hip, Coriander, Sweet Peel, Black Peppercorn, Orris Root, Liquorice Root, Heather, Locally Sourced Wild Angelica & Meadowsweet. Both the latter - it is claimed - have medicinal properties, indeed meadowsweet was used by Felix Hoffmann in 1897 to create a new drug called Aspirin, traditionally taken to relieve headaches.

Juniper
At the heart of all great gins (it's what makes gin, gin after all), we use the beautiful blue berries for the distinctive taste of spice.

Coriander
We use the seeds to add warmth, spice and ensure a full flavour in conjunction with the sweet peel.

Sweet Peel
The complex flavour of our chosen Saville Orange peel compliments the peppery flavour note in Sky Gin adding tartness rather than sweetness. Use a slice of the same for our perfect serve.

Wild Angelica
The Wild Angelica Root in Skye Gin is picked locally to help us create the authentic taste of the island with every sip.

Black Peppercorns
Once referred to as black gold for its cost and rarity, the humble peppercorn adds a sharp spicy and warming note.

Orris Root
From the iris plant, orris has a rich history in herbal medicine and perfume. It’s precious so we use it sparingly to enhance the other flavours and ensure our gin distils beautifully.

Rose Hip
Adds a slightly tart, jammy flavour and balances some of the sweeter ingredients.

Heather
Forever associated with Scotland through our literature and folklore, heather adds a pleasant floral note.

Liquorice Root
Widely used in herbal medicine, its flavour is fifty times sweeter than sucrose, so we add a very small amount to infuse our gin without the distinctive aniseed taste.

Meadowsweet
Grows well in wet woodland, so we’re lucky to be able to source locally on Skye.
